Caught speeding by hidden policeman

I'm new here and this is my first post. So, I want to know where I stand with this really. I was driving back from work at lunch time today along a road leading out of the town where I work. There isn't one single speed limit sign along his stretch of road after entering it from a main roundabout. Suddenly, I see a policeman ahead walking out from a side road. He ushered me in to the side road and proceeded to ask what I thought the speed limit was. I genuinely assumed (I know assuming things is bad) that it was 40 mph as its a main road with not many residential buildings around and less than 50 meters further up, there are national speed limit signs in place. His motorbike was also parked on the pavement on this side road and he told me that he had clocked me at 42 mph. I'm quite certain that he was hiding round the corner as I didn't see him at all until he walked out and flagged me down. So 2 issues I have here are, firstly, do they have to be visible when using speed traps and secondly, should there be signage present to indicate the speed limit? I also found it strange that the speed limit will go immediately to 60 from a 30 and vice versa of coming the other way. I just want to know where I stand really? Whilst he had me stopped there were cars/vans flying past at much greater speeds (I know this doesn't make my office justifiable) and I really think they would be better placed putting up some speed limit signs instead. He told me if I was in doubt about the limit, that I should look down the side roads and see the closeness of the lamp posts also...
