Reversed in to while parked... insurance query

Hi All

Just fairly simple query that I could do with some feedback on. 3 weeks ago, I stopped for for a coffee on a highstreet while out on my motorbike.

Was told by the fraffic warden I could park for free as bikes were exempt, so stopped in the last space of a row of bays behind another stationary car - see the crude image below...

So I was last vehicle in the bay, parked facing out in to the road as displayed with a car in front about 4 feet furthur up, pretty standard parking for a bike. I was stood where X marks the spot facing my bike - off the bike, helmet off, parked - being handed a coffee by the lady from inside the coffee shop who brought it out to me.

Suddenly out the blue, feel a bang in my back, driver parked in next spot along (its one only bay, he was just furhur up it) has reversed, driven in to my back, and continued far enough to knock both me and my bike to the floor... luckily no one hurt and I wasnt crushed (gal from coffee place had to jump out the way of my bike falling).

Pick myself up, driver apologizes profusely asks if im ok, states he should have checked his mirror before reversing (bear in mind im 6 foot tall, in a bright fluorescent bikers jacket behind him, pretty hard to miss). I take a few snaps on my phone, pick my bike up - mainly cosmetic damage but enough to be annoying, plus some fluids leaking out from inside. take his mobile number, name, car reg (got him and his car in photos too) - he shoots off sharpish.

Forward on few days, I ask how he wants to play it - hes like I would sooner avoid the insurance etc etc. so i thnk fair play, i got off and grab the price of relevent parts, mostly from ebay - totals 600 quid (all raw parts no fitting, all to be done by myself). I let him know, week goes past hear nothing, chase up, nothing, threaten to go to police and insurance - suddenly he comes back but is only happy to pay 300 else do as I please.

Another week goes by so i ask for his insurance details (to be honest I just want to know he has insurance before I go off to mine, last thing I need is a claim off mine following an incident last year). Hes now taken to totally ignoring me, no contact, feedback, txts or emails - tried to call just now, ignored the call.

Whats my best course of action now? I imagine its going to be going to my insurance however, what if he is uninsured?? surely this is going to impact me in the long run.?? Could really do without them writing off my bike and/or hitting up my insurance - surely I have a good case here?? (have 2x witnesses, one being the lady who jumped out the way of my bike who was handing me the coffee).

Any pointers would be handy.
